Meal Plan 12/24 through 12/30

My first meal plan post:

Friday – Christmas eve
Saturday – Christmas day
I didn't cook these days because we would be with family and eat with them.

Sunday – Brown sugar meatloaf
Recipe from: http://www.momswhothink.com/easy-recipes/easy-dinner-recipes.html
I did make one substitution: I subbed honey BBQ sauce for the katsup. This was amazing! We both ate two pieces and I polished it off the next day for lunch.
Monday – rice penne with four cheese sauce and steamed salad shrimp
An old favourite I made once before. We use rice pasta because I removed gluten from Elvo's diet. It seems to have cut down significantly on his illness. Rice pasta tastes identical and can be purchased from your local hippie store. Four cheese sauce is white in color and it's right next to the spaghetti sauce and such. Salad shrimp are a cheap way to make something "fancy" and can easily be steamed in the rice cooker.
Tuesday – honey glazed ham
I didn't make this. I can't remember why, but I didn't even buy the ingredients.
Wednesday – grilled mahi mahi marinated in Italian dressing, pasta in butter sauce
Simply delicious. Recipe from: http://www.cooks.com/rec/view/0,1726,157184-241194,00.html
Thursday – coconut beef over rice
This is tomorrow's dish. I'll let you know!

I have a livejournal account. You're welcome to check out http://kolizeon.livejournal.com/ if you want to read a lot of random crap. I'll try to keep the random crap on there rather than here, but you should know that I'm given to tangents, random rants, long delays between posts, irrational responses to stimuli, typos, and run-on sentences. I'm a contributing member of society, I promise, I'm only like this on the internet.

Now to the true reason for this blog:

Elvo is my boyfriend. His real name is David but nobody calls him that. I call him Elvo and he calls me Angel because we're sappy and romantic like that. Elvo was really sick for a long time and no one could figure out why. So I started doing things to try to fix him on my own.

Most of them didn't work.

Once, in an accounting class, I had yet another idea: I would cook him dinner. We'd make a schedule. Humans like routine, they like knowing what to expect, so maybe knowing he had a hot meal ready at 6 pm every day would help him somehow. I scrawled out all the dishes I knew how to make -- five dinners.

Five.

Time to head to the internet!

That was a few months ago. I've been making weekly meal plans and now I'm going to blog them. I'll post the plans, the mistakes, and the reactions. Also you may get gratuitous cat opinions since I have three cats and we like to make them eat things too.

Did you know cats like salsa? Riveting information like that is why you want to read this blog.

You know it's true.
